A compact blade for precise cuts
The Hakami Sakura utility knife is a versatile kitchen tool, perfect for everyday food preparation. Its medium size falls between a paring knife and a chef’s knife, with a total length of 24 cm that makes it easy to make precise cuts on the cutting board.
Its 12-cm blade features a paring knife profile and a smooth cutting edge. It is particularly well-suited for cutting fruit, vegetables, herbs, small pieces of meat, or portioning certain foods. Its three-layer San Mai construction combines a core of 10Cr15CoMoV stainless steel with two softer outer layers. This design results in a blade that is both durable and sufficiently rigid for precision work.
The hammered finish, also known as tsuchime in Japanese cutlery, creates an irregular surface on the blade. These ridges prevent food from sticking during cutting and give this San Mai knife its distinctive appearance.
A comfortable and durable handle
The brown handle is made of Pakka, a wood-based composite material impregnated with resin. It offers good resistance to moisture and repeated use, while retaining the warm appearance of wood. This material is particularly well-suited for a kitchen knife intended for frequent use.
Its oval shape naturally fits the palm and allows you to easily adjust your finger position depending on the task at hand. It provides a stable grip when preparing vegetables, fruits, herbs, or small pieces of meat. The handle is also balanced to match the blade’s size, supporting short, precise movements.
The total length of 24 cm makes the knife easy to control, even on a small cutting board or in a kitchen with limited space. The brown finish complements the San Mai pattern and the hammered finish of the blade to create a simple, understated design inspired by Japanese aesthetics.

Usage and Care Instructions
Use this San Mai steel knife on a wooden cutting board or a soft surface. Avoid glass, stone, or ceramic surfaces, which may damage the blade. Hand-wash the blade with a soft sponge, then dry it immediately. Dishwasher use is not recommended to preserve the steel, the hammered finish, and the Pakka handle. Do not use the blade to cut bones, frozen foods, or very hard items. To maintain a sharp edge, use a whetstone suitable for this knife.
Hakami, Japanese culture
Hakami has developed several collections of kitchen knives inspired by Japanese floral motifs. The Sakura line evokes the cherry blossom and combines three-layer San Mai blades with a hammered finish and Pakka wood handles. The brand also offers the Tsubaki collection, inspired by the Japanese camellia, and the Ajisai collection, which draws inspiration from the hydrangea.
