Sukenari is a Japanese company that has been in existence since 1933, and today is renowned for producing top-of-the-range knives. Sukenari's blacksmiths have mastered the design of Honyaki knives, which are considered to be of the highest quality in cutlery. Sukenari has benefited from the ancestral forging techniques used to make samurai katanas. With these hundreds of years of experience, Sukenari now offers handmade knives that combine authenticity and modernity.
This santoku knife features a 19.5cm blade with a damascened structure. This process consists of manufacturing a rigid steel core which is then covered by a superposition of several softer steel layers to create optimal balance. These layers also protect the core of the blade.
Japanese SG2 steel is used to manufacture this core. Produced by the renowned Takefu Special Steel, it has a high carbon content of around 1.3%. Carbon is the essential element that increases the hardness of an alloy, since high hardness confers a more effective cutting edge. With a hardness of 63HRC on the Rockwell scale, this is a high-performance blade with a cutting edge that lasts. This means you'll be able to extend the time between sharpening sessions.
The SG2 alloy also contains around 15% chromium, an element that enhances resistance to corrosion. However, with its high carbon content, this blade should be considered oxidizable and requires careful maintenance to prevent oxidation.
In terms of its microscopic structure, SG2 steel is a "pure" composition: this means that its micro-carbons are evenly distributed for excellent balance. As a result, it is more resistant to wear and the risk of micro-cracking.
To complete the damascus formation, several layers of softer steel are added: in this case, 72 layers of steel are superimposed. They protect the core while balancing its rigidity. You can see this superimposition on the surface of the blade, where the layers form random fine waves that are unique to each piece! The handle of your Sukenari knife is made of rosewood, a solid wood that is resistant to shock and humidity. Its brown tones are adorned with dark veining for an authentic look that is unique to each knife. It comes with a black buffalo horn bolster, a durable material that reinforces the dark aesthetic of your kitchen knife. A ring is added between these two parts of the handle to add a touch of finesse.
Octagonal in shape, this handle is suitable for all cooks: right-handed and left-handed! It offers an ergonomic grip for comfortable use, especially during prolonged use.
Finally, wood putty has been added where the blade joins the handle to fill any small gaps. This ensures a watertight seal and prevents small food items from slipping inside.
This Japanese knife should only be washed by hand with a non-abrasive sponge and mild detergent, avoiding wetting the handle. Once washed, dry immediately and store in a dry place, free from all traces of moisture. Do not soak in the sink, and do not use the dishwasher.
