Sukenari is a Japanese company founded in 1933, and today is renowned for forging high-quality knives. Indeed, Sukenari's blacksmiths have the skills to master the manufacture of Honyaki knives, which are considered to be of the very highest quality in cutlery. Sukenari has inherited ancestral forging techniques already used to design samurai katanas. With all this experience, Sukenari now offers handcrafted knives that blend authenticity and modernity.
This Universal knife features a 16.5cm blade with a damascened structure. This technique consists of forging a rigid steel core, which is then surrounded by several layers of softer steel that overlap to create optimal balance. These layers also protect the core of your blade.
Here,Japanese SG2 steel has been used for the blade core. This is a powder steel produced by the renowned Takefu Special Steel, with a high carbon content of around 1.3%. Carbon is the essential element that increases the hardness of an alloy, since higher hardness means better edge retention. On the Rockwell scale, its hardness is 63HRC: proof that your blade performs well and that its cutting edge retains its edge for a long time. This means you can space out your Sukenari knife sharpening sessions even further.
What's more, SG2 alloy is composed of around 15% chromium, an element that improves resistance to corrosion. However, this blade should be considered as oxidizable and requires careful maintenance to avoid oxidation.
In terms of its microscopic structure, SG2 steel is a "pure" composition, since its micro-carbides are evenly distributed for excellent balance. As a result, it is more resistant to wear and the risk of micro-cracking.
To complete the damascus, several layers of softer steel are added: in this case, 72 layers of steel are superimposed. They protect the core while balancing its rigidity.
In fact, you can see the superimposition of the different layers of steel on the surface of the blade. They form random fine waves that are unique to each knife! What's more, your blade has been polished for an elegant mirror-effect finish!
The handle of your Japanese knife is made of rosewood, a robust species that is resistant to shock and humidity. Its brown shades are adorned with dark veining for an authentic look that's unique to each piece. A durable black buffalo horn bolster completes the dark aesthetic of your kitchen knife. A ring is added between these two parts of the handle to add a touch of finesse.
The handle is octagonal in shape to suit all cooks, right- and left-handed alike! It's ergonomically designed for a comfortable grip and optimum handling, especially for long-duration use.
Finally, wood putty has been added where the blade fits into the handle to fill in the small gaps. This makes the whole unit watertight and prevents water from seeping inside.
This handcrafted knife should only be washed by hand with a non-abrasive sponge and mild detergent, avoiding wetting the handle. Once washed, dry it immediately to keep it in a dry place, free from traces of moisture. Do not soak in the sink, and do not use the dishwasher.
