Description

Japanese excellence in vegetable slicing

The nakiri Kai Shun Kagerou Japanese knife is the epitome of Japanese knife-making expertise. This 16.5cm model , specially designed for slicing vegetables, combines luxurious aesthetics, formidable efficiency and meticulous ergonomics. Winner of the prestigious Red Dot Award 2025, the Shun Kagerou range perfectly embodies Japanese heritage combined with modern innovation.

Thanks to its slim, rectangular blade, the Shun Kagerou nakiri knife is perfect for chopping, mincing or mincing vegetables with speed and precision. Its cutting geometry enables effortless slicing, preserving the texture and freshness of vegetables. It's a must-have for vegetable enthusiasts and discerning chefs alike.

A precision Dual Core blade

The 16.5cm blade features a Dual Core structure, combining two top-of-the-range stainless steels: VG2, flexible and resistant, and VG10, known for its hardness and cutting performance. This combination of steels achieves a hardness of around 61 HRC, guaranteeing a razor-sharp cutting edge and excellent durability. This combination is made possible by Composite Blade Technology, which enables the steels to be precisely fused, ensuring long-lasting cutting performance and unique aesthetics.

The result is a blade sublimated by a 71-layer damascus on the lower part, with undulating patterns reminiscent of rising flames. The upper part of the blade is mirror-polished and contrasts elegantly with the damascened zone, separated by a refined copper edging. The Shun logo, visible on the blade and engraved on the base, underlines the high-end character of this exceptional knife.

Ergonomic handle in pakka wood

The knife's handle measures 12.5cm and is made of mottled grey pakka wood, a moisture-resistant composite material. Its symmetrical U-shape, exclusive to the Shun Kagerou range, ensures a comfortable, secure grip, equally suited to right- and left-handed users.

The forged base and stainless steel bolster offer a perfect balance between blade and handle, guaranteeing great stability and optimal control when cutting. This is a knife that combines elegance, comfort and efficiency down to the smallest detail.
