The sharpness of this knife will satisfy you from the very first use. Made from VG5 steel, the blade's core contains a high carbon content, giving it a hardness of 59 HRC on the Rockwell scale. With this level of hardness, we recommend gentle sharpening with a 3000/8000 grit Sharpening stone. This core is wrapped in a softer steel to protect the VG5 and balance hardness and flexibility. This hardness means less frequent sharpening is required, and the quality of the cut is excellent. VG5 is very similar to VG10, and these steels have the same properties, except that VG5 is slightly more resistant to corrosion.

Hammering the blade is not just a question of design! As you cut your fish, you'll notice that it's less likely to stick to the blade, making your work more pleasant and saving you time.

The knife's handle is made from a mixture of resin and paper called micarta. This material is both robust and hygienic. The knife can be quickly cleaned by hand with the soft side of a sponge.
