The heart of the blade is made of Japanese VG10 steel, a top-of-the-range steel with an international reputation for its cutting quality and long-lasting sharpness. Its carbon and cobalt content enables it to achieve an HRC hardness of 60, synonymous with long-lasting sharpness and easy sharpening.
The blade is damascened, consisting of 33 layers of soft and hard steel around the core of the blade, just as Japanese swords were forged in the past. The blade is thus solidified with a touch of suppleness to make it less brittle in use. Beyond its technical advantages, the mist-shaped damascus of Un-Ryu knives gives them a real aesthetic appeal.
As for the handle, it is made of laminated reinforced wood. It is composed of several layers impregnated with resin to enhance its strength. It has a protective lacquer coating and has been polished for a more pleasant feel and better grip. The light color is reminiscent of traditional Japanese style. It is completed by 3 rivets and a steel bolster linking the blade to the handle. It balances the knife, makes it more resistant and adds a final aesthetic touch.
From the very first use, you can feel the efficiency of the cutting edge: the final sharpening of Shimomura Un-Ryu knives is carried out on a water stone, by hand, by a qualified craftsman.
Shimomura Un-Ryu knives are made in Japan by the cutlery company of the same name. Shimomura was founded in 1874, specializing in the manufacture of agricultural tools. From 1957, they were among the first to enter the field of stainless steel knives. Their know-how and high-precision processing technology result in efficient blades suitable for both domestic and professional use.
We recommend cleaning by hand, under lukewarm water with a neutral soap, wetting the handle as little as possible, as wood does not like to be dampened. Then simply wipe dry with a soft cloth and store in a dry place, ensuring that there are no further traces of moisture. Careful maintenance after each use will ensure that your knife retains its original appearance for a long time to come.
