Wusaki Unagi knives are made by the Japanese cutlery company Tsunehisa. The company is made up of a small team of highly skilled experts. Their know-how is immediately apparent in the beautiful finishes and choice of materials.
The Wusaki Unagi 24cmKiritsuke knife is a model that allows for a variety of cuts. It works like a chef's knife, making it extremely versatile! Its shape adds a very authentic touch: its marked tip is a reference to the Japanese swords used in the past.
Blade :
The blade has a core of AUS10 steel, a Japanese steel considered the strongest of the AUS family. This steel is enriched with carbon (1.05%), giving it a rigid cutting edge that holds its sharpness for a long time. The hardness obtained is 60 HRC, offering an interesting ratio between wire durability and ease of maintenance. You'll have no trouble maintaining the edge with a Sharpening stone when necessary.
The alloy used is also enriched with nickel, manganese, vanadium and silicon, balancing the hardness of the carbon to make the blade less brittle. What's more, it resists corrosion and wear in general.
The core is then surrounded by several superimposed layers of steel. These layers are enriched with nickel, creating a slight color contrast between the different layers, making them easy to distinguish. The succession of these layers once again balances the hardness of the core, and adds a certain suppleness to the blade (we're not talking here about pure flexibility, but rather about the steel's ability to better absorb light shocks).
Damascus plays a dual role: technical and aesthetic. It adds character and originality to the blade. Moreover, the damascus pattern visible on Wusaki Unagi knives is not often seen: the layers follow one another in a circular pattern, as if a drop of water had fallen on the surface of the alloy and small waves were propagating through the water.
For even greater authenticity, the brand logo has been engraved on the cutting surface.
Handle:
The handle is made of oak, a durable wood appreciated in cutlery for its resistance to humidity, shock and temperature variations.
It is octagonal in shape, making it suitable for both right- and left-handed cooks!
The handle is lacquered black, which slightly darkens the natural oak color. Weight-wise, it remains light and easy to handle. So it's comfortable to use, even over long periods of time.
Finally, a binder has been injected to fill the gap between the blade and the handle so that nothing can get in.
Maintenance:
Wash by hand (no dishwasher) and wipe with a soft cloth immediately afterwards for complete care. This will help to preserve it over the long term, since even though it is considered stainless, this knife contains carbon, which is oxidizable. Also, as the handle is made of wood, we recommend not getting it too wet.
