The Wusaki Unagi AUS10 17.5cm bunka knife is an all-purpose knife. It is quite similar to the santoku knife, but differs in that its sharp blade is reminiscent of katanas. It can be used for fish, meat, fruit, vegetables and herbs.
Wusaki Unagi knives are made by Japanese cutler Tsunehisa, a small team of highly skilled experts! These knives are synonymous with fine finishes and quality materials. Their know-how is perfectly reflected in these knives!
Blade details :
The heart of the blade is made of AUS10 steel, a Japanese alloy considered to be the finest in the AUS family! Enriched with 1.05% carbon, its cutting edge is rigid. The resulting hardness reaches 60 HRC, offering an interesting ratio between edge durability and ease of maintenance with a Sharpening stone.
This alloy is also enriched with nickel, manganese, vanadium and silicon, which balance the hardness of the carbon to make the blade less brittle in use. It's an alloy with many qualities, renowned for its resistance to corrosion and wear in general.
This core is then enveloped by several superimposed layers of nickel-enriched steel, creating a contrast of colors between the different layers. This alternation of layers again balances out the hardness of the core, while adding a little suppleness (we're not talking here about pure blade flexibility, but rather about the steel's ability to better absorb small impacts).
Damascus has above all a technical role to play, but it also adds a very aesthetic touch, bringing character and originality. What's more, the damascus pattern on Wusaki Unagi knives is unique! The different layers follow one another in a circular pattern, as if a drop of water had fallen on the cutting surface before spreading out in small waves.
Finally, for even greater authenticity, the brand logo has been engraved on the cutting surface.
About the handle :
Made from oak wood, this durable species is highly prized in cutlery. It is also resistant to moisture, shock and vibration, so it won't warp too easily.
The handle is finished in a light black lacquer that darkens the natural oak color.
The handle is octagonal in shape, with 8 sides to suit any hand and allow ambidextrous use of the knife. For maximum comfort, the knife remains lightweight for ease of use.
Finally, a binder has been injected at the junction between blade and handle to prevent any food or liquid from entering.
Knife care :
Wash by hand (no dishwasher) and wipe with a soft cloth immediately afterwards for complete care. This will help to preserve the knife over the long term, since even though it is considered stainless, this knife contains carbon, which is oxidizable. Also, as the handle is made of wood, we recommend not getting it too wet.
