Wusaki Unagi knives are designed by the Japanese cutlery company Tsunehisa. It is made up of a small team of highly qualified experts. Their know-how is immediately apparent in the beautiful finishes and choice of materials.
This Wusaki Unagi 14cmUniversal knife is a small, versatile model. It can be used to cut fruit, vegetables and boneless meat. Its small size makes it easy to handle!
Blade :
The heart of the blade is made of AUS10 steel, an excellent Japanese alloy considered to be the strongest of the AUS family. This steel is enriched with 1.05% carbon, giving it greater rigidity. With a hardness of 60 HRC on the Rockwell scale, the result is a blade with a durable cutting edge that remains easy to sharpen.
The alloy used is also enriched with nickel, manganese, vanadium and silicon, adding balance to the hardness of the carbon to make the blade less brittle. Full of qualities, this steel resists corrosion and wear in general.
This core is then enveloped by several superimposed layers of steel. These are enriched with nickel, creating a slight color contrast between the different layers that helps to distinguish them. The succession of these layers balances the hardness of the core and adds a certain suppleness to the blade (it's not pure flexibility, but rather the steel's ability to absorb small shocks).
While damascus has a technical role to play, it is no less magnificent for adding a touch of character and originality to the blade. What's more, the damascus pattern on Wusaki Unagi knives is quite unique: the layers form circles, as if a drop of water had fallen on the surface of the blade and small waves were propagated through the water.
For even greater authenticity, the brand's logo has also been applied to the knife's cutting surface.
The handle:
The handle is made from oak wood, a perfectly durable species much appreciated in cutlery for its resistance to humidity, shock and temperature variations. So it's hard to warp!
The handle is lacquered black, slightly darkening the natural oak color. This gives the knife even more character! Octagonal in shape, the 8-sided handle is suitable for all cooks!
What's more, it's lightweight, making it easy to handle for long periods of time. That's a plus if you're planning to spend a few hours in the kitchen!
Finally, a binder has been injected to fill the gap between the blade and the handle so that nothing can get in.
Care:
Wash by hand (no dishwasher) and wipe with a soft cloth immediately afterwards for complete care. This will help to preserve it over the long term, since even though it's considered stainless, this knife contains carbon, which is oxidizable. Also, as the handle is made of wood, we recommend not getting it too wet.
