Description

The Wusaki Unagi 21cmKiritsuke knife is a bit like a chef knife. Like a chef's knife, it can be used for a variety of cuts, making it a versatile tool. Its shape adds a touch of authenticity, with a sharp point reminiscent of the traditional Japanese swords used by the samurai.

Wusaki Unagi knives are made by Tsunehisa Cutlery, a small team of skilled experts in the field. You'll immediately notice their know-how in the finishing of the pieces and the materials chosen!

A unique blade:

The heart of the blade is made of AUS10 Japanese steel, the top-of-the-range alloy in the AUS family! It is enriched with 1.05% carbon, giving it a rigid cutting edge with a long-lasting sharpness. The result is a hardness of 60 HRC, offering an interesting ratio between wire durability and ease of maintenance. You'll have no trouble maintaining the cutting edge with a Sharpening stone when necessary.

This alloy is also enriched with nickel, manganese, vanadium and silicon, which balance the hardness of the carbon to make the blade less brittle in use. It's an alloy with many qualities, notably its resistance to corrosion and wear in general.

This core is then enveloped by several superimposed layers of steel. These are enriched with nickel, creating the color contrast between the different layers that can be seen on the blade. The alternating layers once again balance the hardness of the core by adding suppleness to the blade (we're not talking pure flexibility here, but rather the steel's ability to better absorb light shocks).

Although damascus has a technical role to play, it also adds real aesthetic appeal. It adds character and originality to the blade. Added to this, Wusaki Unagi knives have a unique damascus pattern: the layers follow one another in a circle, like a drop of water falling on the cutting surface, spreading small waves through the water.

Finally, the brand's logo can be seen on the blade for added authenticity.

A pleasant handle:

It's made from oak wood, a durable species much appreciated in cutlery! The wood is resistant to humidity, shock and vibration, so it won't warp easily.

The handle is coated with a black lacquer that darkens the natural shade of the oak. This adds a touch of character.

Octagonal in shape, its 8 sides are suitable for all cooks (right- and left-handed!). So it's easy to hold and comfortable to use. And for added comfort over time, the handle remains lightweight.

Finally, a binder has been injected at the junction between the blade and the handle to prevent any food or liquid from entering. So this knife is perfectly hygienic!

How to care for this knife

Wash by hand (no dishwasher) and wipe with a soft cloth immediately afterwards for complete care. This will help to preserve it over the long term, since even though it is considered stainless, this knife contains carbon, which is oxidizable. Also, as the handle is made of wood, we recommend not getting it too wet.

Store carefully in a knife block!

Very nice

Very pretty, I preferred to give it a shot of 3000-grit stone because on first use, I found it less sharp than my other knives. After that, it joined the others in the "cuts very, very well" category. It responds well to sharpening, is fine and can be used for fine cuts.
