Description

This Wusaki Unagi 21cm chef knife is the most indispensable model in the kitchen. It's ideal for all your cutting needs, whether for meat, fish, vegetables or herbs. Its versatility means you'll never want to part with it!

Wusaki Unagi knives are manufactured by Tsunehisa Cutlery, a small team of highly skilled experts in the field. You'll notice the craftsmanship in the finishes and choice of materials.

A beautiful blade:

The blade has a core of AUS10 steel, a Japanese steel renowned for its strength. In fact, it's the strongest of the AUS family! This steel is enriched with carbon (1.05%), giving it a rigid cutting edge that lasts. The final hardness of the alloy reaches 60 HRC, offering an advantageous ratio between wire durability and ease of maintenance. The latter is easily carried out with a Sharpening stone for impeccable results.

The alloy used is also enriched with nickel, manganese, vanadium and silicon, which balance the hardness of the carbon to make the blade less brittle in use. All in all, it's an alloy full of qualities: it resists corrosion and wear in general.

This core is then surrounded by several superimposed layers of steel. These layers, enriched with nickel, create an attractive color contrast between the different layers, which at the same time makes it possible to distinguish them on the blade. The alternating layers once again counterbalance the hardness of the core and add suppleness to the blade. It should be noted that when we speak of suppleness, we're not referring to the blade's pure flexibility, but rather to the steel's greater capacity to absorb impact.

The damascus on the blade adds character and originality to the knife. Although damascus plays a technical role, it also gives the knife a very aesthetic look! In this case, the damascus on the Wusaki Unagi is truly unique. In fact, it is shaped like a circle, as if a drop of water had fallen onto the blade before spreading out to form small waves in the water.

Finally, this blade comes with the brand's logo engraved on the cutting surface, guaranteeing its authenticity.

An elegant handle:

The handle is made of oak, a wood that is resistant to moisture, shock and vibration, and will not warp easily. It's a species much appreciated in cutlery!

The handle is finished in a light black lacquer that darkens the natural shade of the oak for added character. It is octagonal in shape and perfectly ergonomic. The 8 faces of the handle adapt to all cooks for ambidextrous use.

The handle remains lightweight, even over long periods of use. You'll have no trouble working with it for hours on end!

Finally, a binder has been injected at the junction between the blade and the handle to prevent food and liquids from entering. So this knife is perfectly hygienic.

Knife care:

Wash by hand (no dishwasher) and wipe with a soft cloth immediately afterwards for complete care. This will help to preserve the knife over the long term, since even though it is considered stainless, this knife contains carbon, which is oxidizable. Also, as the handle is made of wood, we recommend not getting it too wet.

Complete the maintenance of your Wusaki knives with a quality Sharpening stone!
