Takeshi Saji 's know-how and expertise
The Takeshi Saji VG10 Rainbow Nashiji 13cm utility knife embodies the elegance and technical sophistication of Japanese forging. It has been handcrafted in Japan by master knifemaker Takeshi Saji in his workshop at Takefu Knife Village, an artisan cooperative located in Fukui prefecture. This emblematic place brings together several blacksmiths who share their know-how while respecting ancestral traditions.
It is in an environment rich in transmission that Takeshi Saji creates unique knives, with meticulous lines and world-renowned performance. He was awarded the title of Master Traditional Craftsman by the Japanese Ministry of Economy in the 1990s, in recognition of his excellence and commitment to traditional cutlery.
A universal damascus knife for versatility
This universal Damascus knife, with its 13cm blade, is the perfect size for precise gestures in the kitchen: slicing, chopping or detailing fruit, vegetables, herbs and small pieces of meat becomes child's play.
The blade has a core of VG10 steel, a Japanese stainless alloy enriched with around 1% carbon. This content enables a hardness of 60 HRC to be achieved, guaranteeing excellent edge retention while facilitating and spacing out sharpening.
This hard core is then surrounded by numerous layers of softer stainless steels, forming a magnificent damascus pattern. This structure provides the blade with controlled flexibility, vibration absorption during cutting, and enhanced durability. Visually, the blade's wavy pattern is enhanced by a Rainbow copper-effect treatment, the signature of this range. Each blade is therefore unique in its nuances and reflections.
The nashiji finish, with its raw appearance, covers the surface of the blade. It is reminiscent of the rough skin of the Japanese nashi pear, and reinforces the knife's artisanal character. In addition to its aesthetic appeal, this finish limits the adherence of food to the blade, for smoother cutting on a daily basis.
Finally, the "flat grind " gives the blade the ideal finesse and strength for clean, resistance-free cutting.
An octagonal handle in noble wood
The handle of this all-purpose damascus knife is made of rosewood, a noble species known for its strength, resistance to humidity and warmth. Its visible reddish-brown grain adds a traditional, elegant touch to the knife.
The bolster is made from red pakkawood, a composite material formed from layers of wood and resin compressed under heat. It joins the blade to the handle with strength and style, while helping to distribute the knife's weight evenly.
The octagonal handle, traditional in Japanese cutlery, provides a comfortable grip and is suitable for both right- and left-handed users. This shape ensures excellent control, even during prolonged handling or precise cutting. To ensure perfect hygiene, wood paste is inserted between the blade and handle to prevent any water or residue from seeping in.
As with all handcrafted knives, this damask Japanese knife should be washed by hand only. Use a non-abrasive sponge, warm water and mild soap. Never soak the knife in the sink, and never put it in the dishwasher. After each use, carefully wipe the blade and handle, then store the knife in a dry, shockproof place. Proper care will enable you to enjoy the beauty of your knife and preserve its performance.
