A handcrafted masterpiece forged by Takeshi Saji
VG10 Rainbow Nashiji Japanese knives are handcrafted by Japanese blacksmith Takeshi Saji. He is renowned in Japan for his expertise and traditional know-how. He hand-forges each knife using ancestral techniques in his workshop in Takefu Knife Village, a blacksmith community located in Fukui prefecture. In the village, blacksmiths can exchange experiences, know-how and materials. They keep alive the local knife-making tradition, which is passed on to the apprentices who come to train here.
In the 1990s, Takeshi Saji was awarded the official title of Master Traditional Craftsman by the Japanese Ministry of the Economy, a distinction that testifies to the exceptional quality of his work. The blacksmith is particularly appreciated for his singularly aesthetic blades, inspired by both nature and Japanese tradition, and his knives are sought-after for their originality as much as for their performance.
A santoku with an original damascus blade
The Takeshi Saji santoku knife features a 16.5cm blade, forged from a core of Japanese VG10 steel. This stainless steel is produced by the renowned Japanese company Takefu Special Steel, and contains almost 1% carbon, enabling the blade to achieve a hardness of 60 HRC on the Rockwell scale. Such hardness ensures excellent edge retention, making sharpening sessions more frequent.
The blade'sflat grind is fine, making it extremely robust. The cut is precise, the aesthetics meticulous and maintenance easy when sharpening.
Around the rigid core, the damascus is formed by alternating layers of softer stainless steels. This allows the blade to retain a certain flexibility and absorb vibrations when cutting. The damascus also protects the VG10 steel core, making it even stronger.
The damascus here is enhanced by a slightly coppery hue, typical of Takeshi Saji's Rainbow Nashiji series. The applied treatment gives each blade a unique identity and original shine. The blade also features a nashiji finish, which remains unpolished. This is reminiscent of the texture of the Japanese nashi pear. It offers both character and practicality, limiting food sticking to the surface when cutting.
A Japanese damascus knife with a rosewood handle
The handle of this handcrafted Japanese knife is made from rosewood, a noble species that resists humidity. The natural, warm-toned veining of rosewood adds an elegant visual touch to the whole knife.
The handle is complemented by a red pakkawood bolster. Pakkawood is a composite material made from layers of wood impregnated with resin and then heat-compressed, combining strength, durability and aesthetics. Its properties combine with the elegance and moisture resistance of rosewood.
The handle is octagonal to ensure a comfortable grip, whether you're right- or left-handed. Wood paste is applied to the junction between blade and handle to fill gaps and ensure perfect hygiene during use.
To preserve the beauty of your handcrafted damascus Japanese knife, it should be washed only by hand, with a non-abrasive sponge and mild soap. Take care not to get the handle wet when cleaning. Once washed, the knife should be dried thoroughly before being stored in a dry place. Dishwashing is not permitted, nor is prolonged immersion in water.
