Wusaki Migaki Japanese knives are made by Japanese cutler Tsunehisa. This cutlery manufacturer is a true team of experts! Their know-how is evident in the choice of materials and the design of the pieces.
The Wusaki Migaki 24cmKiritsuke knife is a traditional Japanese kitchen knife! Similar to a chef's knife, it's just as versatile and can be used for meat, fish, fruit, vegetables and herbs. The shape of the Kiritsuke knife blade is reminiscent of the Japanese swords used by the samurai.
Migaki knife blade :
The blade is built on a San Maï structure, i.e. it is composed of 3 superimposed layers of steel. The blade has a core of Ginsan steel, a Japanese alloy composed of 0.95% carbon, making the wire stiffer than average for a long-lasting edge. It is also enriched with chromium, making it more resistant to corrosion.
Ginsan steel reaches a hardness of around 60 HRC and offers a good compromise between ease of sharpening and edge retention. If you feel that the cutting edge is running out of steam, simply use a suitable Sharpening stone.
This core is then surrounded by a layer of stainless steel that protects and softens the blade. It will then be less brittle during use. Note that this difference in alloy can be seen on the bottom of the blade, where a slight wave runs along the entire cutting edge.
Discreet kanji have been engraved on the back of the blade for added authenticity.
Migaki knife handle:
The handle is made of enju wood, a sturdy yet light wood. This Asian wood has a warm, light hue and a unique grain. For a perfect finish, the handle is lightly polished.
The handle is easy to grip, even over long periods of time. The octagonal handle (8 sides) is suitable for all ambidextrous users.
Finally, a binder has been injected between the blade and the handle to fill the gap and prevent liquids or food from entering.
Care instructions :
This knife should be washed by hand, without over-washing the handle. The dishwasher should not be used, and the knife should not be left soaking in the sink. Once washed, simply wipe with a soft cloth and store, checking for any remaining traces of moisture. This will ensure that your knife retains its original appearance!
