Wusaki Migaki Japanese knives are made by the Japanese cutler Tsunehisa. Made up of a veritable team of experts, all their know-how and expertise are reflected in the design of these unique pieces.
The Wusaki Migaki 21cm chef's knife is useful for all your everyday cutting needs. Indeed, the chef's knife is considered the all-purpose knife to have in your kitchen, and for good reason: with it, you can chop, slice and chisel your meats, fish, vegetables and herbs.
Details of the Migaki knife blade:
Based on a San Maï structure, the blade is composed of 3 superimposed layers of steel. Its core is made of Ginsan steel, a Japanese alloy with a carbon content of 0.95%, making the wire stiffer than average and ensuring a long-lasting cutting edge.
This steel also has a high chromium content, making the knife more resistant to corrosion.
Ginsan steel achieves an HRC hardness of around 60 on the Rockwell scale, providing a good compromise between ease of sharpening and edge retention. When the need arises, you can easily sharpen your knife using a Sharpening stone.
Finally, this core is enveloped in a layer of stainless steel, whose role is to protect it and give it suppleness, so that it is less brittle during use. This difference in steel can be seen on the bottom of the blade, where a small wave runs along the entire cutting edge, marking the change in alloy.
On the back of the blade, beautiful kanji engravings add a touch of authenticity to this knife.
The Migaki knife handle :
The handle is made of enju wood, a sturdy Asian species with a light, warm hue and unique grain. The handle also has a slight shiny effect, giving the knife a very aesthetic look and a fine finish.
Octagonal in shape, its 8 sides are suitable for ambidextrous use. Lightweight and easy to handle, it's comfortable to use even over long periods of time!
Finally, a binder has been injected between the blade and handle to fill the gap and prevent liquids or food from entering.
Care instructions :
This knife should be washed by hand, without over-washing the handle. The dishwasher should not be used, and the knife should not be left soaking in the sink. Once washed, simply wipe with a soft cloth and store, checking for any remaining traces of moisture. This will ensure that your knife retains its original appearance!
