A refined, high-performance Yu Kurosaki Fujin knife
The Yu Kurosaki Fujin SG2 turquoise 12cm utility knife is a unique piece of craftsmanship, entirely hand-forged by one of the most talented master blacksmiths in the Takefu Cutlery Village. Its spectacular design, inspired by "Fujin", the Japanese god of the wind, is distinguished by finely beveled hammering.
Versatile, this all-purpose knife excels on a wide variety of foods: fruit, vegetables, meat or small fish. Its 12cm blade ensures clean, pleasing cuts.
Yu Kurosaki: a master blacksmith from the Takefu Cutlery Village
Based in Fukui prefecture, Yu Kurosaki is internationally renowned for his handcrafted creations of rare precision. Trained since his early teens, he has been forging his own knives for over 20 years in the famous Takefu Knife Village, a stronghold of many renowned Japanese craftsmen.
His Fujin range pays homage to the wind through fine, organic, beveled hammering. Each knife is hand-forged using traditional Japanese techniques, while incorporating contemporary aesthetic finishes.
12cm SG2 blade: power, precision and durability
The core of the blade is made of SG2 steel (also known as R2), a high-end Japanese powder steel containing around 1.3% carbon. In fact, it achieves a hardness of 63 HRC, ensuring an extremely fine, long-lasting cutting edge.
This blade is built on a San Maï (typically Japanese) structure: a rigid core is sandwiched between two layers of softer stainless steel, providing both flexibility and protection to the high-performance core. The result is a hard-wearing blade perfectly balanced between strength and precision.
Fujin hammering, the signature of the master blacksmith, is not only aesthetically pleasing: it reduces the adherence of food to the blade.
Last but not least, the flat cutting edge guarantees linear and continuous penetration of every food item you cut.
Ebony handle: balance and elegance
This Yu Kurosaki Japanese knife features an octagonal handle made from ebony, a dense wood that is naturally resistant to humidity, shock and temperature variations. This noble wood offers excellent durability and a silky feel that's very pleasant in the hand. Its various dark shades give it a timeless appeal.
The octagonal shape, traditional in Japan, ensures an ergonomic grip, whether you're right- or left-handed. Ideal for long preparation sessions, it reduces fatigue while improving gesture control.
The bolster is also made of solid ebony, for elegant visual continuity with the handle. The whole is enhanced by a natural turquoise ring, cut and polished by hand, giving each knife a touch of uniqueness and refinement.
As each piece of turquoise is different, each knife is unique.

Care and preservation
Care for this handcrafted Japanese knife by washing it by hand with a soft sponge and neutral soap. Dry immediately to avoid any traces of moisture remaining on the surface. Never put in the dishwasher. Then store it in a box or case, or place it on a magnetized bar to protect it from knocks (so you can admire it). Sharpen regularly with a Japanese stone suitable for SG2 steel to preserve its cutting edge.
To protect your knife and ensure top-notch cutting results, why not equip yourself with a wooden cutting board?
