An imposing yet ultra-precise blade
The 16.5cm blade of this knife is characterized by its imposing rectangular shape. It cuts fruits and vegetables of all sizes with the utmost precision, provided they are not hard-skinned (like squash, for example).
Thanks to the nakiri, movements are fast and precise. Its wide blade also comes in handy once you've finished cutting , when you need to remove the pieces from your cutting board.
The knife's blade features a core of VG10 steel, a top-of-the-range alloy highly reputed in cutlery circles for its excellent characteristics.
First, let's talk about its composition. VG10 steel contains approximately 1% carbon, 15% chromium, 1.5% cobalt, 1% molybdenum and 0.2% vanadium. The carbon provides the knife with good rigidity for better wire performance. Chromium ensures good corrosion resistance.
Next, VG10 gives the blade a higher hardness than the average of other steels. At +-60 HRC, the cutting edge is efficient and durable, yet easy to sharpen.
The VG10 core is also surrounded by 36 alternating layers of hard and soft steel, i.e. 18 layers on each side of the core. This is known as damascening. It's a meticulous technique that enhances the blade's solidity while providing good flexibility. The Japanese are masters of this art.
Finally, the blade is hammered all over the top. In addition to harmonizing visually with the damascus of the blade, hammering further enhances its strength. By forming micro-cavities, hammering ensures that greasy or moist foods are cut cleanly and do not stick to the blade.
An ergonomic, elegant micarta handle
The handle of the nakiri damas is made of black canvas micarta. This is a composite material containing 40% resin and 60% linen, which is highly resistant to humidity and prevents the knife from shrinking over time.
Micarta is durable and resistant to temperature variations: it can withstand heat of up to +150°C! As a result, micarta cannot warp and prevents gaps from forming between the blade and the handle.
This material has also been approved by the FDA for use in professional kitchens . Finally, two rivets complete the handle to hold it securely in place.
To clean your knife, we recommend washing it gently by hand and drying it immediately to preserve its beauty. This knife is not dishwasher-safe.
