This 14cm chef's knife is a must-have in the kitchen. It's the ultimate multi-purpose knife, capable of chopping, mincing or mincing various foods, such as vegetables, meat, herbs...
The blade is made of stainless steel. The latter has been enriched with carbon and chromium: this more intense concentration further enhances the knife's corrosion resistance and strength.
In fact, its final hardness is between 56/58 HRC, so the cutting edge remains stronger, but the steel is still easy to maintain, for example with a Sharpening steel. A few passes over it and you're done. In fact, it's the quickest solution in professional kitchens!
What's more, the blade has been forged using the SIGMAFORGE process ( Zwilling's own): the blade is formed from a single piece of steel, which avoids too many welding points, thus increasing the knife's strength and balance.
Heat treatment of the blade is based on the FRIODUR method: the steel is immersed in ice to bring down its temperature almost brutally. The aim is to further increase the steel's strength and hardness, for an impeccable finish. This technique also perfects the cutting edge, giving it a slight suppleness that makes it easy to use. Sharpening is carried out using the V-Edge profile (i.e. a "V" shape), at 15° on each side of the blade (a total of 30°). The cutting edge is sharp, and rivals even some Japanese knives!
The slightly curved bolster perfectly links the blade to the handle. It is soft and pleasant in the hand (a brand innovation, adding the right design touch). The handle is made of black synthetic material, with 3 rivets securing the full tang blade inside. Comfort is optimal for both left- and right-handed users.
Beyond its performance, this knife series is also notable for its look, created by Italian designer Matteo Thun.
The design of these knives is of course at the service of ergonomics, but there's no denying that it adds cachet to the range. It's a perfect blend of classic and modern: the result is timeless.
To care for your knife, we recommend hand-washing it and drying it immediately with a soft cloth, to maintain its appearance and performance.
