This Zwilling Pro18cm Santoku kitchen knife looks very much like a Western chef's knife, but its shape is Japanese.
Quite simply, it's a jack-of-all-trades: it slices, chops and minces, thanks to its slightly curved blade that gives a pleasant rocking effect when cutting.
You'll quickly come to appreciate this Japanese-shaped knife, especially as it has been designed using innovative Zwilling technology!
Its blade is made from a proprietary alloy of stainless steel. This alloy has been enriched with carbon and chromium, both of which have a direct impact on the knife's corrosion resistance and strength!
Rockwell strength is around 56/58 HRC: the cutting edge not only performs well over time, but is also easy to maintain (you can do this with a Sharpening steel, which is a very quick solution for knife maintenance).
What's more, the blade has been forged using Zwilling's own SIGMAFORGE process: the blade is formed from a single piece of steel, which avoids too many welding points, thus increasing the knife's strength and balance.
Next comes the FRIODUR heat treatment (Zwilling's own process). The steel is immersed in ice to bring down its temperature rapidly. The aim is to further increase the strength and hardness of the steel already enhanced by the alloy. It also perfects the edge of the cutting edge, giving it a little extra flexibility when cutting.
The V-Edge profile ("V" shape) is sharpened at 15° on each side of the blade (a total of 30°). The sharp cutting edge rivals that of some Japanese knives! As a result, food fibers are not broken or damaged: they are sliced cleanly, for a taste that is respected.
This knife has a slightly rounded, curved bolster that forms the link between the blade and the handle. It's soft and pleasant to the touch, and helps keep your fingers from slipping. The handle, meanwhile, is made of black synthetic material, with 3 rivets securing the full-silk blade inside. Comfort is optimal for both left- and right-handed users.
Last but not least, the sleek styling of this knife line was developed by Italian designer Matteo Thun. The simple, sharp shapes create a totally timeless design!
Knife care is by hand, and we recommend drying immediately after washing.
