Sakai Takayuki called on master blacksmith Itsuo Doi to forge these knives. Itsuo san has been practicing for over 50 years, using a traditional technique taught by his father: he forges steel at a lower-than-average temperature to preserve all its particles. As a result, the knives are more durable and are true pieces of quality. Takayuki homura guren sakai knives feature a San Maï-designed blade, the core of which is made from top-of-the-range Japanese Aogami #2 steel. This steel, with a hardness of 62 HRC, has a very pronounced, long-lasting cutting edge, giving you clean cuts with fewerstone-sharpening sessions. The blade of your homura guren handcrafted Japanese knife has retained its rough-forged look, making it very authentic! This authenticity is enhanced by superb hammering. Hand-engraved kanji echo the name of the range. The kanji 焔 reads Homura and means flame in Japanese. The flame refers to the handles of the range's gyuto and yanagiba knives, which are made from burnt oak. Oak is a durable wood that resists deformation, even when subjected to shock or vibration.
