A STITCH ON THE BLADE OF THE TAKESHI SAJI R2 Tsuchime KNIFE
The blade of Takeshi Saji R2 Tsuchime knives is built on a San Maï base, i.e. it features 3 alternating layers of steel. Thanks to this typically Japanese structure, the core in the center is always more rigid. This is followed by a layer of softer steel that protects and softens the whole blade, making it more resistant to breakage, without being flexible. This core is made of R2 steel, a Japanese powder-metallurgy stainless alloy. Due to its relatively high cost, it is rarely found in cutlery, yet its efficiency is such that it achieves an HRC hardness of 63 and a long-lasting, high-performance cutting edge! It is also easy to sharpen with a Sharpening stone. Microscopically speaking, its structure is very homogeneous for greater strength and less risk of chipping during use. The R2 steel is surrounded by a layer of softer stainless steel that wraps around it completely, which is why we speak of 3 layers. This superimposition of steel is directly visible on the blade, thanks to the small wave that runs across the entire cutting surface.
BEAUTIFUL FINISHES AND A PLEASANT WOODEN HANDLE
As for the finishes on Takeshi Saji R2 Tsuchime Japanese knives, the top of the blade is lightly hammered. This finish, known as Tsuchime, not only enhances the blade's non-stick properties (similar to honeycombing), but also gives the knives in the range their own unique style! As for the handle, it's made from quince wood, a beautiful species rarely used in cutlery. This light-colored wood features beautiful, unique nuances on every handle. This handle is complemented by a stainless steel bolster decorated with gilding, providing a beautiful transition between the character of the handle and the elegance of the blade. The base, too, is in stainless steel, providing added balance and ease of use. These takeshi saji knives are comfortable to hold and offer stunning visual appeal.
