Miyabi kitchen knives are highly appreciated by both professionals and novice cooks preparing recipes at home. Why are they so popular? Simply because they offer the perfect combination of efficiency and design! The Japanese knives in the 5000FCD series are no exception to the rule: equip yourself at a reasonable price for impeccable Japanese quality and craftsmanship!
The blade of this 11cm longparing knife (also known as Shotoh) has a core of FC61 steel, which is extremely strong. This steel is then surrounded by 48 alternating layers of hard and soft steel, culminating in the famous Damascus blade! This allows it to be hard without being brittle (since the mild steel has the particularity of providing a little suppleness).
Next, the blade is cooled using the FRIODUR® process, which consists of extreme cooling that adds hardness to the blade. Combined with the type of steel chosen first, this method produces a hardness of around 61 HRC on the Rockwell scale.
The handle is made of Pakkawood, a composite material combining compressed wood and resin. The result is moisture-resistant and long-lasting. It also features the distinctive "D" shape of Japanese handles, for greater balance (though this may surprise you at first). The steel base adds the final touch of balance to the knife.
When you opt for Miyabi 5000FCD knives, you're choosing quality, price and design! Then take a look at the full range of 5000FCD Japanese knives!
