Spanish manufacturer Arcos, whose models date back to 1745, is an international benchmark in cutlery. The knives are made in Albacete, and are the fruit of traditional know-how and the latest technologies in the sector.
This professionalFileting knife (which can also be used as a skinning knife) from the Colour Prof range features a 19cm semi-flexible blade in NITRUM®stainless steel.
This specific composition, developed by the brand, is enriched with nitrogen to increase its resistance to corrosion. The treatment of the blade is also a guarantee of the knife's quality: the ICE PLUS treatment, which consists of cold quenching the steel (-80°) after the usual hot heat treatment, gives the blade superior hardness. It achieves a strength of 57 HRC on the Rockwell scale, a very good compromise between edge retention and ease of sharpening (for example, you can maintain it with a Sharpening steel).
The handle is made of sturdy polypropylene overmolded with non-slip rubber, providing the comfort needed for prolonged use. Each Colour Prof knife comes with a set of 6 coloured discs to clip onto the end of the handle to differentiate the knives as you wish. In fact, you can assign a color to a function, to avoid cross-contamination (e.g. blue for fish, yellow for cooked meat or charcuterie...).
What's more, the plastic of the handle has been enriched with a special antibacterial treatment called Bactiproof® (silver-based): it is 99.9% effective against bacteria. It is also resistant to high temperatures.
