The knives are designed in Albacete, Spain, and are the fruit of a blend of traditional know-how and innovative industry technologies.
This professional knife from the Colour Prof range features an 18cm with granton edgeblade in NITRUM®stainless steel.
This special alloy developed by Arcos is enriched with nitrogen to increase the blade's resistance to corrosion.
The treatment of the blade is also a guarantee of its quality: the ICE PLUS process, which consists of cold quenching the steel (-80°) after the usual hot heat treatment, gives the blade a higher hardness. It achieves a strength of 57 HRC on the Rockwell scale, a very good compromise between edge retention and ease of sharpening.
The handle is made of sturdy polypropylene overmolded with non-slip rubber, providing the comfort needed for long-lasting work.
Each Colour Prof knife comes with a set of 6 coloured discs to clip onto the end of the handle to differentiate the knives according to your needs. In fact, you can assign a color to a function, to avoid cross-contamination (e.g. brown for raw vegetables, blue for fish...).
What's more, the plastic of the handle has been treated with a special anti-bacterial treatment called Bactiproof® (silver-based): it is 99.9% effective against the proliferation of bacteria. It is also resistant to temperature variations. So you can equip yourself with Arcos Colour Prof knives, which meet NSF standards to guarantee safe use!
