This professional salmon knife is part of the Colour Prof range from Arcos. It features a 30cm-long, flexible, round-tipped with granton edgeblade in NITRUM®stainless steel. This special alloy developed by the manufacturer is enriched with nitrogen to increase the blade's resistance to corrosion. What's more, the honeycombs help to produce attractive slices, as they enhance the blade's non-stick properties by creating micro-bubbles of air between the steel and the food being cut.
The blade also benefits from ICE PLUS treatment, which consists of cold quenching (-80°) the steel after the original hot heat treatment. This gives the blade a higher hardness, in this case 57 HRC on the Rockwell scale. This is a very good compromise between edge retention and ease of sharpening.
The handle is made of sturdy polypropylene, with the addition of non-slip rubber to provide the comfort needed for long-lasting use. Each Colour Prof knife comes with a set of 6 coloured discs to clip onto the end of the handle to differentiate the knives according to your needs. In fact, you can assign a color to a function, to avoid cross-contamination (between meat, fish...).
What's more, the plastic of the handle has been given a special antibacterial treatment called Bactiproof® (silver-based): it is 99.9% effective against the proliferation of bacteria.
