This professional butcher's knife from the Colour Prof range features a 35cm blade in NITRUM®stainless steel. This special composition developed by the brand is enriched with nitrogen to increase its resistance to corrosion. The treatment of the blade is also a guarantee of the knife's quality: the ICE PLUS treatment, which consists of cold quenching the steel (-80°) after the usual hot heat treatment, gives the blade superior hardness. It achieves a hardness of 57 HRC on the Rockwell scale, a very good compromise between edge retention and ease of sharpening, which you can implement, for example, using a sharpening Sharpening steel.
The handle is made of hard polypropylene overmolded with non-slip rubber, providing the comfort of use necessary for the prolonged work of professionals in the sector. Each Colour Prof knife comes with a set of 6 coloured discs to clip onto the end of the handle to differentiate the knives as you wish. In fact, you can assign a color to a function, to avoid cross-contamination (e.g. blue for fish, red for meat...).
What's more, the plastic of the handle has been enriched with a special antibacterial treatment called Bactiproof® (silver-based): it is 99.9% effective against bacteria. It is also resistant to high temperatures.
