The word santoku, of Japanese origin, translates as "the 3 good things". It alludes to the usual kitchen tasks: chiseling, slicing and mincing. You might think of it as a chef' s knife, but you'll recognize it by its broad, smooth-edged blade, curved tip and dimples. The latter allow air to circulate between the blade and the food, preventing the two from sticking together and ensuring a clean, precise cut.
The blade is made from NITRUM®stainless steel, a metal alloy exclusive to the Spanish brand that offers superior cutting performance and excellent edge retention. At 270g, this knife is slightly heavier than traditional knives.
The handle is made of polyoxymethylene(POM), a material that offers excellent grip and enhanced resistance to high temperatures (from -40 to 150°C). It is secured by 3 corrosion-resistant stainless steel rivets.
Although versatile, the Arcos Rivierasantoku knife is ideal for cutting richly-fleshed raw fish such as tuna and salmon, or fragile foods such as fruit.
It meets all NSF hygiene standards, and its handle incorporates Bactiproof Silver technology, a system that reduces the presence of bacteria, germs and fungi by 99.9%.
