Slice your poultry, red meat or fish like a top Japanese chef with this Slicing knife knife from the Bamboo Kyoto range!
Tamahagane Bamboo Kyoto Japanese knives have all the qualities you'd expect, so you're sure to fall in love with them! It's worth noting that the Japanese use a steel called "tamahagane" to design their swords, which are renowned for their excellent cutting edge - which says a lot about the level of sharpness of the brand's knives!
The blade of this Bamboo kyoto slicing knife measures 27cm, making it ideal for slicing large pieces of meat without tearing the fibers.
If the quality of the cutting edge is aimed at perfection, it's of course thanks to the choi steel used to design the blade. To date, Tamahagane is the only Japanese cutlery company to use VG5 steel in the design of its knives. This steel has many points in common with VG10 steel, for example in terms of hardness and cutting performance. The carbon content varies between 0.7% and 0.8%, making it even more robust. This hard, resistant VG5 steel core is surrounded by a softer steel to strike the right balance between hardness and flexibility. This steel also protects the VG5 from corrosion and impact. 63 damascus layers are formed using this process, giving the knife a purely Japanese appearance.
Thanks to these characteristics, the blade achieves an HRC hardness of 59 on the Rockwell scale. This hardness ensures long-lasting sharpness, enabling you to sharpen the blade less often.
The knife's handle is out of the ordinary. Made of stainless steel, it's easy to clean with a quick wipe and protects against corrosion. The bamboo-effect design of the handle is reminiscent of the knife's Japanese origins. It has been sculpted to create a pleasing bamboo stalk effect.
This slicing knife has the strong points every cook hopes for. Put it in the spotlight on a magnet bar, its original design makes it ideal for decoration! Whether you're a lover of Japanese knives or a seasoned professional, Tamahagane Bamboo Kyoto knives are for you.
