Looking for good knives with long-lasting sharpness? Choose the Tamahagane Bamboo all-steel range!
This Tamahagane BambooUniversal knife is made for all meticulous cooks who dream of effortlessly slicing their vegetables finely!
Its 15cm blade is made from VG5 steel, which contains between 0.7 and 0.8% carbon. Thanks to this high carbon content, Rockwell hardness is set at 59 HRC,compared with 54-56 for standard steels. This means you can slice your vegetables thinly without damaging the dear. What's more, you won't need to sharpen your knife too frequently, as hard steels retain their edge longer.
For those in the know, VG5 steel delivers the same cutting quality as VG10 steel(widely used in Japan), so the cutting edge is excellent! This hard core full of assets is wrapped in SUS410 steel (softer), which is why it's called 3-layer steel. This steel will protect the core from possible thermal and physical shocks(note that it does not provide 100% protection against corrosion).
The handle is designed like a bamboo stalk, recalling the Japanese origins of this knife. Made of satin-finish stainless steel, it is anti-bacterial and easy to clean! Hygienic, it also resists corrosion, so a quick wipe down with a sponge is all it takes. The ergonomic design makes it pleasant to hold.
Care instructions: wash your knife by hand after use and wipe dry with a cloth: don't let it drip, as this could damage the blade. We recommend sharpening the blade as soon as you feel a weakness in the cutting edge, using a grit stone such as a double-sided 3000/8000 stone.
Let yourself be seduced by the modern, all-steel design of this knife! It's ideal for professional use, but also for cooking at home!
