The excellent Tamahagane Bamboo all-steel range will win you over with its many assets!
Don't force your blade to cut any fruit or vegetable, this paring knife will make the task so much easier! Cut your tomatoes into thin slices in no time, without damaging the fibers, thanks to this Tamahagane Bambooparing knife.
Made from VG5 steel, its 12cm blade is enriched with carbon (content: 0.7 to 0.8%). VG5 has many properties in common with VG10 steel, notably in terms of edge quality, and is slightly more resistant to corrosion(but far from stainless). Thanks to its high carbon content, the blade has a Rockwell hardness of 59 HRC,compared with 54-56 for the most common steels. This hardness will enable you to cut your tomato or fruit cleanly without exerting pressure on the blade. What's more, a hard steel like VG5 doesn't require frequent sharpening, as the blade wears less quickly.
This is called 3-layer steel becausethe hard core is enveloped by SUS410 steel on the flanks, a softer steel that protects the core from possible shocks.
The handle is designed to resemble a bamboo stalk, recalling this knife's Japanese origins. Made from satin-finish stainless steel, it's soft to the touch, making it a pleasure to hold. Hygienic because it's antibacterial, you'll have no trouble keeping it clean!
Care instructions: wash your knife by hand and wipe dry with a cloth immediately afterwards: don't leave it to dry on a drainer, or next to a sink, where it could absorb moisture. For sharpening, we recommend a grit stone (between 3000 and 8000).
Choose this all-steel knife, because it's so pleasant to cook with a quality knife, whether you're a professional or an amateur!
