This ko-bunka knife features a 15cm blade, ideal for slicing a wide variety of foods. Whether for meat, vegetables or fish, this versatile knife is a kitchen must-have!
The blade of this kitchen knife is made from high-carbon steel, offering precise, clean cutting. Thanks to this carbon-rich alloy, the cutting edge remains durable and efficient over the long term. To maintain it, you can sharpen it with a stone when the need arises.
Your blade has a Kurouchi finish, i.e. it retains its rough-forged appearance. This unpolished blade gives your Chan Chi Kee knife a rustic, authentic character! During the forging process, the iron in the steel has been blackened by the flames, reinforcing its resistance to corrosion while giving it a unique style.
The handle measures 8.5cm, which is quite short. It is made of wood, to evoke the design of wine or spirit barrels, reinforcing the authenticity of your knife. Round in shape, the handle is ergonomically designed for a comfortable grip.
Finally, the tang of the knife is slightly curved at the heel of the handle. This reinforces the solidity of the whole by firmly attaching the handle to the blade.
Hong Kong-basedChan Chi Kee (CCK) is renowned for its specialization in Chinese chef's knives and Chinese cleavers. Founded nearly a century ago, it has earned a worldwide reputation for the quality of its kitchen knives.
This ko-bunka knife features a particularly high 6cm blade, the signature of CCK knives. This height enables fast, efficient vertical cutting, just as professionals do.
For maintenance, it is essential to wash this knife by hand only, using a non-abrasive sponge. Because of its carbon content, it should be dried immediately after washing to avoid corrosion. It should be stored in a dry place, away from any moisture. Do not soak in water or use in a dishwasher.
Over time, it is normal for carbon steel to change color slightly. To prolong its protection, apply a little mineral oil to the blade from time to time.
