A top-of-the-range kitchen knife blade
This 17cmnakiri knife features a square blade with a 10Cr15CoMoV stainless steel core. This high-grade steel already enjoys international renown for its durability and cutting efficiency (it can withstand a razor finish, for example).
It contains around 1.05% carbon, giving it an excellent hardness of around 60 HRC on the Rockwell scale. Such a core ensures a long-lasting sharp edge, and avoids repeated sharpening.
The core is then surrounded by 67 layers of damascus. Damascus is a complex process consisting of alternating layers of steel (hard and soft) around the blade core. The hard steel increases the knife's hardness, while the soft steel adds a slight suppleness (to make it less brittle). Beyond its technical advantages, damascus creates unique waves on each knife, which are extremely fine and undulate on the cutting surface, for a breathtaking visual effect.
Above the damascus, you can distinguish a press-hammered area, with unique patterns on each blade. In addition to its aesthetic appeal, hammering is recommended to increase the knife's non-stick properties (in the manner of honeycombing).
The left-hand surface of the blade has been laser-engraved with the brand and range name, for even greater authenticity.
The cutting edge has been worked into a V-shape, giving it formidable penetration into food (this shape, combined with quality sharpening, cuts rather than breaks the internal fibers of food). The final sharpening is done by hand, on a strip of leather with a 15° side angle. The result is formidable: you'll feel it from the very first cut!
Finally, the blade benefits from a mirror-polished finish, which adds to its cachet, while also making it more resistant to corrosion (as polishing flattens the surface of the steel and makes it less porous to moisture).
The handle is a notable element in the composition of the Wusaki Damascus 10Cr knife, and is made from olive wood, which has been sanded and treated to give a pleasantly soft feel. This noble wood, with its characteristic scent, contrasts beautifully with the cold appearance of steel. Its veins are unique to each knife: prestige guaranteed! It has been carved in an original, slightly curved shape, to be very comfortable in the hand and fit naturally into the palm. In this way, the thumb and forefinger that hold the knife retain their strength during use, for ideal control of the knife. Finally, Wusaki handles are a little longer than the current cutlery market average, so that cooks with large hands can appreciate them just as much.
Each handle is unique! Colors, patterns and grain can vary depending on which parts of the wood are used to make the handles. Some parts are darker than others, depending on the knots in the wood, for example. This is perfectly normal.
The base engraved with the Japanese character"Tiger" gives the knife a perfect finish. Its sandblasted appearance contrasts with the smooth surface of the steel. The three red edgings add an undeniable touch of elegance to the knife.
How to store and care for your nakiri knife
The Wusaki Damascus 10Cr is a knife with character: the combination of materials and colors makes it an exceptional piece of cutting equipment. At once simple and slightly sophisticated, it will appeal to even the most fastidious of cooks!
Each Wusaki knife comes in a top-of-the-range box that protects it from shocks. The elegant box makes it easy to give as a gift! Wusaki knives are manufactured by a small company located north of the city of Guangzhou, the capital of Guangdong province in Western China. This province is historically renowned for its knife-making expertise. Wusaki expertise is entirely governed by French manufacturing standards established for professionals in the sector.
For maintenance, we recommend gentle hand-washing in lukewarm water with a mild soap. You can then wipe the knife with a soft cloth and store it in a dry place. When washing, try to keep the handle as dry as possible, as wood doesn't like to get wet. From time to time, you can also wipe the handle with a soft cloth soaked in olive oil, to add shine and protection. Please note: on delivery, the knife blade is lightly coated with protective oil. Simply wash before 1st use to remove.
The Damascus 10Cr olive wood range is incompatible with magnet bars due to the depth of hammering and the weight of the knives. Instead, store your knives in a block or Bag!
