A high-performance santoku knife in VG10
This santoku knife features a damascus-patterned blade: it is thus made up of a hard steel core surrounded by several superimposed layers of softer steel. The damascene pattern gives the blade a much-appreciated aesthetic appeal.
Damascus is not only aesthetically pleasing, it also guarantees optimum balance for your blade. The heart of the blade is made of VG10 Japanese steel, an alloy with around 1% ice-hardened carbon. A high carbon content increases the alloy's hardness, and this high hardness coupled with ice hardening enables it to reach 60HRC on the Rockwell scale.
VG10 alloy also contains around 15% chromium, which ensures its resistance to corrosion. However, with its high carbon content, this blade needs careful maintenance to avoid oxidation.
The rigid core is covered with 33 layers of softer steel that alternate to form the damask pattern. They balance the hardness of the core by adding suppleness to prevent your blade from breaking. Thanks to the outer layers, the blade is less sensitive to micro-shocks when cutting, reducing the risk of breakage.
The surface of the blade is hammered to create a contrast with the different damascus layers. This hammering also serves a practical purpose, as it prevents food from sticking to the blade during cutting.
A Japanese knife with an ergonomic wooden handle
This Japanese knife has an ergonomic, Western-style handle that gives you an ideal grip. The handle has a finger rest at its base for greater comfort, especially when used for long periods.
The handle is made from Spanish mahogany wood and is finished in a glowing brown hue. As it is a natural wood, the grain of the handle is unique to each piece. Although mahogany is light, it is a durable species that is impact-resistant and protected by a layer of transparent woodstain.
A stainless steel bolster links the blade to the handle. This is complemented by 3 rivets, also in stainless steel, which hold the handle to the full tang blade. This is a highly reliable Sakai Takayuki knife!
This santoku knife should only be washed by hand. Do not soak it in the sink, or put it through the dishwasher. When washing, take care not to get the handle wet, and use a mild soap with a non-abrasive sponge. After washing, dry the knife thoroughly and store it in a dry place away from moisture.
