This Universal knife has an unusual shape that allows you to make a wide range of cuts. Its shape has been designed to prevent you from touching your cutting board when raised above the blade. With this knife, you can cut a wide range of foods such as meat, fish or fruit and vegetables. It's a versatile Japanese knife!
The Glestain K Series has been designed to satisfy both professional and domestic cooks. These Japanese knives have a superior cutting edge and an ergonomically shaped handle to guarantee comfort of use. Thanks to these knives, you'll save time in the kitchen!
For this Japanese kitchen knife, the blade is made of ACUTO440 stainless steel for enhanced corrosion resistance and durability. This alloy is widely used in Glestain knives, and is composed of carbon, chromium, vanadium and molybdenum.
To begin with, carbon is an essential element that increases the hardness of your blade. As a result, it reaches a hardness of 59HRC on the Rockwell scale: this ensures a long-lasting edge with a high-performance cutting edge for a long time to come.
Vanadium and molybdenum also play a role in high hardness. Vanadium also adds elasticity to your blade, making it more resistant to micro-shocks. Molybdenum and chromium help reinforce corrosion resistance to prevent oxidation.
So this steel is durable, high-performance and hard-wearing! What's more, its cutting edge is easy to maintain with a Sharpening stone when necessary.
For top-quality sharpness, this blade is Sub Zero hardened. This technique involves subjecting the knife to very low temperatures immediately after heating. This stiffens the blade, making it stronger and more durable by creating a fine, homogeneous structure. At Glestain, this process is broken down into 7 well-defined stages that require precision and time.
This blade has a convex cutting edge, which also contributes to its effectiveness! In fact, a convex cutting edge ensures better food penetration for clean cuts.
Finally, the blade of this Japanese kitchen knife is with granton edge, which prevents food from sticking to the sides when cutting!
The handle of this Glestain knife is made of black pakka wood, a composite material that is robust and durable. This material is made from resin and laminated wood, all heat-hardened. You therefore benefit from the advantages of a composite material while still having the visual appearance of wood, with a grain that looks natural.
The handle is Western-shaped to suit the hands of all cooks. It guarantees an ergonomic, comfortable grip for perfectly controlled handling, especially during prolonged use.
Finally, this Universal knife features a stainless steel bolster and 3 rivets. These attach the full tang blade securely to the handle, making your knife reliable in use.
To care for your Glestain knife, wash only by hand with a soft sponge. Once cleaned, dry immediately with a clean cloth before storing in a dry place. Do not put in the dishwasher or leave to soak in the sink.
It was in 1971 that engineer Akira Honma decided to create the Glestain brand of knives, with the aim of combining technology and science to achieve optimum performance. To raise its profile in the early days, Glestain chose to make direct contact with restaurants and chefs. This enabled us to gather vital feedback from kitchen professionals, with the aim of constantly improving.
Mr.Honma personally passes on his manufacturing techniques and innovations to carefully selected craftsmen, helping to strengthen the reputation of Glestain knives among kitchen professionals!
