Description

The Japanese brand Hatsukokoro was founded by a company that had been specializing in Japanese kitchen knives for some ten years. By collaborating with renowned Japanese blacksmiths, experts in traditional forging techniques, Hatsukokoro benefits from the know-how of these renowned craftsmen! Their Japanese knives are renowned for their remarkable quality and unique aesthetics.

A Japanese knife with an elegant damascened blade

This santoku knife features a high-quality damascened blade, obtained by a process that involves forging a hard steel core, then enveloping it in several layers of softer steel. This technique adds suppleness to your blade, providing the optimum balance of hardness and core protection for your damascus knife.

The core of this blade is made from Aogami #2 (also known as Blue Paper Steel 2), a steel produced by the renowned steelmaker Hitachi. This alloy has a high carbon content of approx. 1.2%, which reinforces the steel's hardness. The blade thus achieves a hardness of 62HRC on the Rockwell scale, offering excellent edge retention for efficient, long-lasting cutting!

What's more, the blade features a thin, flat grind, offering both strength and practicality. This type of grind is easy to reproduce during sharpening, while adding an aesthetic touch!

To complete the damascus structure, several layers of softer stainless steel envelop the Aogami core, providing protection and flexibility to reduce the risk of breakage during use. These layers are superimposed along the length of the blade, creating delicate undulations with unique patterns. This damascus knife features an original design with an unusual copper finish!

Finally, the damask blade has been carefully polished, giving it an elegant, refined finish!

The sober ebony handle for this Japanese kitchen knife

This Japanese santoku knife features a handle made entirely of ebony wood, an exotic species renowned for its strength and longevity. This wood, with its deep color and dark veins, gives each Hatsukokoro knife a unique aesthetic and distinctive character!

The octagonal handle of this handcrafted Japanese knife is perfectly suited to the hands of all cooks, whether left- or right-handed! It offers an ergonomic grip that ensures great comfort, even during prolonged use in the kitchen.

Finally, wood paste has been applied to the junction between the blade and handle to fill the gaps, ensuring optimum watertightness and preventing water or small food debris from seeping in.

Caring for a handcrafted Japanese knife

To preserve your carbon knife, always wash it by hand, using a sponge and a mild detergent, and take care not to get the handle wet. After washing, dry it immediately with a clean cloth to remove all traces of moisture, then store it in a dry place. Do not put in the dishwasher, and never leave the knife to soak in the sink.

Over time, it is normal for the blade to take on a slight patina. This change in color is a natural reaction of the carbon to the humidity or acidity of the food being cut. This in no way alters the performance of your Japanese knife!
