Kai Seki Magoroku Kaname knives are essential tools for everyday use in the kitchen! Made from high-quality materials, these Japanese knives guarantee efficient cutting.
The versatile all-purpose knife is perfect for making a variety of cuts. It is equally suited to fruit, vegetables and meat. Thanks to its 15cm blade, this Japanese universal knife is ideal for precision work, and its kiritsuke tip enhances that precision even further! However, avoid using it on excessively hard foods, such as squash or bones.
This Japanese knife features a blade built using the San Maï technique: a hard steel core is enveloped by a softer, folded-over layer of steel. This method effectively protects the core of the blade while balancing out its hardness.
The core of the blade is made of VG-Xeos steel, an alloy created by the renowned Takefu Special Steel. Enriched with carbon, this steel achieves a hardness of 61HRC on the Rockwell scale, offering excellent edge retention and cutting performance! This reduces the frequency of sharpening, and the edge can be easily maintained with a whetstone.
To complete the San Maï structure, a layer of stainless steel envelops the core, providing protection and flexibility without compromising rigidity. This makes the blade less likely to break during use. On the edge of the blade, you can see the superimposition of steels, forming a delicate and unique wave with random patterns.
Finally, the blade features an elegant satin finish, adding a touch of refinement to the whole!
The handle of this Japanese kitchen knife is made of black pakkawood, a robust and durable material. It's a composite made from laminated wood and resin, hot-pressed. This process combines the strength of composite with the natural aesthetics of wood, thanks to its visible grain.
With its octagonal shape, this handle is suitable for both left- and right-handed users, offering an ergonomic grip and great comfort, even during prolonged use in the kitchen!
A stainless steel bolster is integrated at the junction between blade and handle, improving the balance of your kiritsuke utility knife!
To preserve your Kai Kaname knife, we recommend washing it only by hand with a sponge and mild detergent. After cleaning, dry immediately with a clean cloth and store in a dry place. Do not put in the dishwasher or soak in the sink.
