Its 16.5cm rectangular blade is designed for cutting vegetables, not bones and cartilage. It is made according to the San Mai pattern, a simplified 3-layer damascus:
- The core is made of Sandvik 19C27 steel, a Swedish steel much appreciated in cutlery. It has a carbon content of 0.5% and a chromium content of 13.5%. This combination enables the stainless alloy to achieve a hardness of 58HRC on the Rockwell scale, guaranteeing a long-lasting, effective cutting edge. So you'll need to sharpen less often!
- The protective layer surrounding the core is made of 410 stainless steel. The 3 layers of steel result from this step. The 410 steel layer surrounds the Sandvik steel core. You can appreciate these 3 layers by looking at the bottom of the blade (near the wire).
The handle of this knife is made of pakkawood, a material obtained by high-temperature compression of wood and resin. Resistant to wear, temperature changes and wear, this material guarantees a long-lasting handle. The handle is joined to the blade by a stainless steel bolster. The whole is reinforced by 3 rivets, also in stainless steel, which enclose the full tang blade in the handle.
