Japan Kanetsune knives are designed and manufactured in Seki, a town renowned for its ancestral knife production. The cutlery maker has blended 800 years of history and cutlery tradition with the latest innovations in steel to forge his know-how.

This santoku knife will amaze you with its versatility. Meaning "three good things", it is designed for slicing, chopping and mincing.

Its 16.5cm blade is manufactured according to the San Mai pattern, a simplified 3-layer damascus:

- The core is made of VG1 steel. High in carbon and chromium, this alloy offers both sharpness and corrosion resistance. With a hardness of 59/60 HRC on the Rockwell scale, this steel guarantees a blade with a long-lasting, effective cutting edge.

- The top layer, which protects the core, is made of 410 stainless steel. This is a mild steel that surrounds the core (hence the 3 layers). You can appreciate these 3 layers when you bone the blade. The use of 2 types of steel results in a blade that is resistant but not brittle, for long-lasting use.

The blade is finished with Tsuchime hammering, which not only gives it an undeniable elegance, but also enhances its non-stick properties. In fact, the hollows formed in this way act as honeycombs, allowing cut food to stick less to the blade.

The handle of this knife is made of plywood, a succession of cross-stranded wooden slabs. The result is a sturdy handle with low water absorption. It is ergonomically shaped for optimum grip. The handle is reinforced by 3 stainless steel rivets that lock the full tang blade into the handle. Blade and handle are linked by a bolster, also in stainless steel.
