Its 13.5cm blade is designed according to the San Mai structure, a simplified 3-layer damascus:
- The core is made of VG1 steel. Rich in carbon, this alloy gives you a long-lasting, effective cutting edge. Equally rich in chromium, this steel displays a certain resistance to corrosion. The combination of these two elements enables the steel to achieve a hardness of 59/60 HRC on the Rockwell scale.
- The top layer is made of 410 stainless steel, a soft alloy that surrounds and protects the core (hence the 3 layers). If you look at the blade, you can see the superimposition of these 3 layers.
The result is a blade that is resistant but not brittle, for long-lasting use. What's more, the blade has a Tsuchime finish. This involves hammering the upper part of the blade. In addition to adding elegance, this technique gives the blade a non-stick property. In fact, the hollows thus formed act as cavities, so food sticks less to the blade when you're cutting.
The handle of this knife is made of black polywood, a stack of cross-stranded wooden plates. It's a sturdy material with low water absorption. Its ergonomic shape gives you an optimum grip for pleasant use of your knife. The handle is reinforced by 3 stainless steel rivets that lock the full tang blade into the handle. A stainless steel bolster holds it all together.
