The Sakai Takayuki brand was created in Japan in the 50s, and offers quality Japanese kitchen knives with a modern, authentic design. It has inherited the skills of the old-time blacksmiths of the Sakai region, who forged the famous samurai katanas.
A high-performance blade in VG10 steel
This sujihiki knife features a blade with a damascened structure: a technique that consists of forging a rigid steel core which is then covered with several layers of softer steel to create an optimal balance. As a result, the blade is less brittle in the event of micro-shocks, and the core is protected.
What's more, damascus is a real aesthetic asset! The superimposed layers form unique patterns that can be seen all along the cutting edge.
The core of this blade is forged fromJapanese VG10 steel. It has a high carbon content of up to 1%: the essential element for increasing steel hardness. This Japanese knife has a hardness of 60HRC on the Rockwell scale, giving it a high-performance cutting edge and excellent wire retention.
The VG10 alloy also contains 15% chromium, making it resistant to corrosion. Nevertheless, this blade is highly enriched with carbon and must be carefully maintained to avoid oxidation.
To complete the damascus, the core is enveloped in 33 layers of softer steel, providing greater protection and flexibility.
The blade of this Japanese knife has been polished for an elegant mirror effect. Its surface has also been hammered for added contrast, a traditional Japanese finish. Hammering is also practical, as it acts like a honeycomb to prevent your food from sticking to the sides when cutting.
A Japanese knife with a quality wooden handle
The handle of this damask knife is made from oak wood, a durable species that resists shock and humidity thanks to its high density. It is also unlikely to warp due to condensation.
The handle of this Sakai Takayuki knife has been lacquered in the Urushi style: an ancestral technique highly appreciated in Japanese art, especially for decorative objects. The black varnish contrasts with the rest of the handle, which is lighter, and gold tips are added to represent a starry night. This knife perfectly represents Japanese poetry, with its contrasts symbolizing day and night.
The handle is octagonal in shape to suit the hands of all cooks, right- and left-handed alike! It gives you an ergonomic, comfortable grip, especially for long-duration use.
Finally, wood putty has been added where the blade joins the handle to fill any small gaps. This makes it watertight and prevents water from seeping inside.
To care for your handcrafted knife, wash only by hand with a non-abrasive sponge and mild detergent, avoiding wetting the handle. Once washed, wipe dry immediately and store in a dry place. Do not use the dishwasher or leave it to soak in the sink.
