Choose the Misono 440 27cm Japanese chef knife and take advantage of its long-lasting, high-performance cutting edge and high resistance to moisture and impact!
The 440 range takes its name from 440C steel. This alloy, used in all the knives in the range, offers excellent corrosion resistance. This steel is close to the highly recognized VG10, but has been enriched with molybdenum and chromium. This resistance to corrosion is one of the reasons why the knives in this range are so widely used by professional chefs.
The 27cm blade offers an asymmetrical cutting angle, without being one-sided. This allows clean, easy penetration of food for efficient cutting without damaging the flesh.
A hardness of 58/59 HRC on the Rockwell scale ensures that the cutting edge lasts cut after cut. Please note that this knife requires a slightly longer sharpening period due to its high chromium content (which nonetheless gives it its high resistance to corrosion).
Brand logos are applied to the cutting surface for a perfect finish.
The handle is ergonomically designed. It provides unrivalled comfort of use. It is made of Pakkawood, a composite material of resin and wood. It gives the knife an aesthetic appearance, while retaining the strength of a synthetic material. It is resistant to temperature variations and humidity.
The slightly recessed base makes it easy to grip, and allows for a controlled gesture whether you're right- or left-handed.
Three stainless steel rivets complete the handle. They consolidate the full tang blade (which extends to the end of the handle). A stainless steel bolster also balances the knife.
For best results, the knife should be hand-washed. Preferably use a soft sponge and washing-up liquid. Wipe the knife dry before storing.
Find out more about the Misono brand:
The Misono story begins in 1935, when the company was a small family business specializing in kitchen peelers. Based in Seki, the capital of Japanese cutlery, the company diversified into the production of kitchen knives from the 1960s onwards.
Today, Misono is considered the oldest manufacturer of Western-style knives in Japan.150,000 knives a year are made 100% by the brand's experts (whereas many producers of this size have certain parts of their knives made by other, more specialized companies).
The knife is made using techniques inspired by those of Japanese master blacksmiths. Many of the manufacturing steps are performed entirely by hand.
Whether you're a passionate amateur or an experienced chef, you'll find the Misono chef's knife to be highly effective. Its timeless design will never tire you!
