This Misono UX10 18cmsantoku knife is a top-of-the-range, high-performance knife!
A brief history of Misono :
Misono is a Japanese brand founded in Seki in 1935. Internationally renowned for its knife-making expertise, the brand originally specialized in the design of kitchen peelers. In the 1960s, Misono diversified into the manufacture of kitchen knives.
Today, Misono is known as the oldest brand of Western-style Japanese knives. 150,000 pieces are produced each year by a staff of around 50. While many manufacturers of this stature have certain parts of their knives designed by other companies, Misono makes 100% of all the parts for its knives.
The manufacturer uses manufacturing techniques inspired by those of Japanese master blacksmiths, carrying out several steps by hand. Today, Misono knives are appreciated the world over, and are used in particular by top chefs.
The UX10 knife range is one of the brand's finest. This range includes kitchen knives with the highest edge retention of the entire brand.
Blade
The 18cm blade of this santoku knife is made of high-quality Swedish stainless steel. It offers excellent resistance to corrosion and impact.
This steel also gives the knife a long-lasting cutting edge. As mentioned above, the knives in the UX10 range have the highest edge retention of all Misono ranges.
Ideally, use a Japanese Sharpening stone to restore the edge of your knife if necessary. With a hardness of ±59/60 HRC, this santoku knife offers a good compromise between long-lasting sharpness and easy sharpening.
The UX10 santoku knife is ideal for effortless, swinging slicing of vegetables, fruit, boneless meat and fish.
The cutting edge has an asymmetrical cutting angle. This shape is designed to facilitate slicing: the knife blade fits ideally into the food and slices gently.
The brand and range logos are engraved on the knife's cutting surface, adding a touch of authenticity.
Handle
Thanks to its materials and shape, this knife is perfect for Western use. That's why it's used all over the world. The handle is made of lightweight black Pakkawood. Pakawood is widely used in the kitchen for its antibacterial properties and resistance to humidity and temperature variations. The ergonomic shape of this knife makes it comfortable to use over time.
The base of the knife has a slightly recessed shape that gives you greater control when handling it. The bolster and 3 rivets are made of nickel silver. This is an alloy of copper, nickel and zinc appreciated for its resistance to oxidation and its hardness. To ensure continuity with the blade, its appearance is similar.
The bolster balances the knife, and the rivets press the Pakkawood handle against the knife's full tang blade. In effect, the blade extends right to the end of the handle.
Care and maintenance
This professional knife is easy to clean by hand. Use a soft sponge and washing-up liquid, then wipe your knife with a dry cloth before storing it away from any source of moisture.
