The 10cm blade is perfect for cutting and peeling small fruits and vegetables. It features a high-end VG10 steel core. With its highly specific composition (around 1% carbon, 15% chromium, 1.5% cobalt, 1% molybdenum and 0.2% vanadium), this steel is ultra-strong and ultra-sharp.
The core of the blade is then surrounded by 68 alternating layers of soft and hard steel (giving 34 layers on each side): the knife has a 69-layer damascened blade. This technique gives the blade a hardness of almost 61 HRC, which is higher than average. It is synonymous with a durable cutting edge that remains easy to sharpen.
Damascening is a process that gives you a very solid blade with good elasticity that approaches perfection.
The Damascus paring knife has a handle made of extremely durable canvas micarta, which you can use for many years without it moving. Made from 60% linen and 40% resin, micarta resists the effects ofhumidity, preventing the creation of gaps between the handle and the knife blade.
Micarta is also highly durable and resistant to temperature variations. For example, it can withstand heat up to 150°C! This composite material has even been approved by the FDA for use in professional kitchens .
The handle also features two stainless steel rivets that fit directly into the knife's solid tang. As the tang is thick and made of high-quality 18/10 steel, it is robust and corrosion-resistant.
