The Sayuto Maple 11cm damask paring knife has been designed for everyday precision work. Its compact size and fine blade make it easy to peel, cut, turn or chisel small fruits, vegetables and herbs. Its small size makes it easy to handle and gives you a pleasant feeling of control when performing meticulous gestures.
This knife also impresses with its particularly refined aesthetics. The copper patterns visible on the blade add depth and relief, while the light sycamore maple handle enhances its natural elegance. Compact, well-balanced and comfortable, this knife will easily find its place in any high-end kitchen.
The blade measures 11cm, an ideal length for cuts requiring precision and agility. This short format facilitates rapid movements and improves cutting control, particularly when peeling or working directly in the hand.
The core of the blade is made of 12Cr18MoV stainless steel containing around 1.2% carbon. This composition ensures a precise, long-lasting cutting edge, while remaining easy to maintain on a daily basis. The addition of chromium, molybdenum and vanadium also provides the steel with appreciable resistance to corrosion, as well as good edge stability during regular use.
The quality of this blade also lies in its forging process. During the manufacturing process, the metal is worked to obtain a more homogeneous, denser structure. The steel fibers naturally follow the shape of the blade, helping to limit internal imperfections and improve the overall coherence of the material. The result is a more consistent blade and a better cutting performance.
Thanks to its high carbon content, the blade achieves a hardness of around 60 HRC on the Rockwell scale. This hardness enables the knife to retain its cutting edge longer, while remaining relatively easy to sharpen with a suitable stone.
Surrounding the core is a 37-layer damascus structure. The outer layers combine 316L stainless steel, brass and copper to create elegant copper ripples visible all over the blade surface. Each knife has its own unique nuance and pattern.
Theflat cutting edge enhances cutting fluidity and promotes excellent precision in delicate work. This profile also ensures comfortable use for both right- and left-handed users.
The knife handle is made from sycamore maple, a species appreciated for its light veining and naturally luminous appearance. Each piece has different nuances, reinforcing the unique character of each Sayuto damascus paring knife.
The octagonal shape provides a stable, natural grip. It facilitates finger placement and improves precision of movement for repeated small cuts. Despite its compact size, the knife retains a very comfortable feel in the hand.
The bolster and base are made from padouk wood, an exotic species with deep red-brown hues. The contrast between padouk and sycamore maple creates an elegant finish that underlines the knife's premium appeal.
Wood pulp has been added between the blade and handle to fill any gaps. This finish enhances the knife's visual appeal while ensuring the best possible hygiene.
To ensure the long-lasting preservation of your Sayuto Damascus Maple blade, we recommend cleaning it exclusively by hand with a soft sponge and neutral soap. Do not use a dishwasher, as it may damage the cutting edge and the natural materials of the handle. After washing, dry the blade and handle immediately with a clean cloth to avoid any traces of moisture. Use a suitable wooden or synthetic board to preserve the cutting edge over time.
To maintain optimum performance, regular sharpening with a stone is recommended. Between uses, store your knife in its superb wooden case. This will protect its damascened blade and preserve its high-end aesthetics.
The Sayuto Damascus Maple 12Cr range is a strong combination of decorative finishes and ease of use. The knife's clean lines highlight the blade's coppery motifs and the natural contrast between light sycamore maple and dark padouk. The result is a visually warm piece, designed to bring as much aesthetic pleasure as precision to culinary preparations.
With this paring knife, Sayuto offers a compact format easy to integrate into any kitchen. Its light balance, sophisticated design and wooden case contribute to the premium experience sought by lovers of fine kitchen knives.
