This konata knife is ideal for cutting many types of food. Efficient on fruit and vegetables, it can also be used to chop herbs and ensure precise cuts on raw meat. Its shape is reminiscent of a santoku knife, and its use is similar. You can cut with the same rocking motion.
Technical features of the blade
The konata has a 21.5cm blade with a smooth cutting edge. The core of the blade is made of SG2 powdered steel, an expensive alloy but one of the best on the market. SG2 steel contains almost 15% chromium and 1.3% carbon for an average hardness of 63 HRC. This hardness ensures a long-lasting cutting edge without the need for regular sharpening with a water stone. Despite this high hardness, knife sharpening remains easy when required. SG2 powdered steel is also known for its purity at the microscopic level. It has a highly homogeneous structure, ensuring great strength.
A layer of stainless steel is then folded over each side of the core to reinforce its strength. The blade is thus 3-layer San Maï damascened.
The entire upper part of the blade is beautifully hammered. This further enhances the blade's sturdiness, and also prevents food from sticking to the blade. Finally, the Yaxell logo and brand name are engraved in the hammering, adding a touch of authenticity to the knife.
Handle features
The handle is connected to the blade by two stainless steel bolsters. It is also made of sturdy, rot-resistant Pakkawood. Pakka wood is composed of laminated wood and resin, making it a non-porous material resistant to humidity and temperature variations. Pakkawood's sober black color is punctuated by an elegant golden grain.
The curved handle guarantees a comfortable, ergonomic grip. At its center is a jewel-like mosaic rivet. The mosaic is the traditional emblem of the Japanese samurai family.
The base of the handle is also finely worked. It features a superb golden engraving of the kanji Ketu, meaning "spotless", "pure". This kanji perfectly reflects the design of the konata knife.
Care and maintenance
This top-of-the-range knife requires careful maintenance to last. That's why it's important to wash it by hand, taking care not to get the handle wet. To do this, use a little washing-up liquid and a soft sponge under lukewarm water. Dry the knife well with a clean cloth and store it safely in a Bag, block or sheath. We recommend that you avoid storing it on a magnet bar, as the blade is hammered, which could cause the knife to fall off.
