Blade technical details
The 24cm blade of this knife has a smooth cutting edge with a core of SG2 powdered steel. SG2 steel is reputed to be one of the best alloys on the market, which explains its high price. It contains around 15% chromium and 1.3% carbon, giving it an average hardness of 63 HRC. This hardness guarantees an extremely durable cutting edge that does not need to be sharpened too regularly with a stone. However, it is easy to sharpen when necessary. SG2 steel is also renowned for its purity: its microscopic structure is so homogeneous that it is highly resistant.
The SG2 steel is then overlaid with a softer stainless steel folded on each side to make it even stronger: this is what we call a San Maï 3-layer damascus blade. The superimpositions of the two steels are visible on the cutting edge of the blade.
The upper part of the blade is also hammered, increasing its strength. Hammering is also ideal for preventing food from sticking to the blade once cut. Engravings of the brand logo and the Yaxell name complete the blade, adding a touch of tradition and authenticity.
Handle technical details
Two stainless steel bolsters join the blade to the handle, which is made of Pakka wood. This blend of laminated wood and resin is highly antibacterial, robust and durable. As Pakkawood is non-porous, it is resistant to temperature variations and humidity. Its attractive black color is highlighted by an elegant, slightly golden grain.
The curved shape of the handle is ideal for a comfortable grip. A mosaic rivet stands out like a jewel in the middle of the handle. It represents the emblem of the Japanese samurai family.
Finally, the base of the knife features a delicate golden engraving of the kanji Ketu, meaning "pure" or "spotless". This detail underlines the finesse of the range to which the chef's knife belongs.
Care and maintenance
Care of this top-of-the-range knife must be meticulous to ensure long-lasting enjoyment. It is important to wash the knife exclusively by hand, taking care not to get the handle wet. Use washing-up liquid and a non-abrasive sponge under lukewarm water. Then use a clean, dry cloth to dry the blade thoroughly before storing the knife. You can then place it in your block, Bag or a suitable sheath. We do not recommend placing the knife on a magnetic bar. As the blade is hammered, the knife may not stay in place and fall out.
