Yaxell's comprehensive Ketu range offers top-of-the-range knives for all your everyday cutting needs. Let's take a closer look at the features of this magnificent knife.

Blade features

This knife features a 20cm blade with a smooth cutting edge. Its core is made of SG2 powdered steel, a high-grade alloy that's quite expensive, but offers many advantages. Composed of around 15% chromium and 1.3% carbon, it achieves a hardness of 63 HRC, ensuring an extremely long-lasting cutting edge. Such hardness makes for easy knife maintenance, as it does not require regular sharpening with a water stone. It is still easy to sharpen when the need arises. SG2 steel is also described as pure because of its microscopic structure. In fact, it is so homogeneous that it is highly resistant.

The SG2 core is then coated on both sides with softer, bent stainless steel for even greater strength. The blade is thus 3-layer San Maï damascened. You can see the different layers of steel on the cutting surface.

Hammering has been applied to the top of the blade to increase its strength, but not only that. This also ensures that food does not stick to the blade after cutting. Last but not least, the blade has been engraved with the Yaxell logo and name to add the necessary touch of authenticity to this top-of-the-range knife.

Handle features

The handle and blade are joined by two stainless steel bolsters. The handle is made of Pakkawood, a composite material of laminated wood and resin. This material is robust, durable and antibacterial, making it ideal for use in the kitchen. It is non-porous and resistant to temperature variations and humidity. The handle has an elegant black color punctuated by a beautiful golden veining.

The curved handle ensures an excellent grip. You can also admire a superb mosaic rivet representing the traditional Japanese samurai emblem, like a little jewel.

Finally, the handle of the knife has also been crafted. It is engraved with the pretty kanji Ketu in gold, meaning "spotless", "pure". This detail only reinforces the knife's delicate, high-end character.

Care and maintenance

As your chef's knife is a top-of-the-range knife, it's important to follow these care instructions for long-lasting enjoyment. Wash the knife exclusively by hand in lukewarm water with a soft sponge and washing-up liquid. Take care not to run the handle under water. Then carefully wipe the blade dry before storing the knife in your block, case or Bag. Avoid placing the knife on a magnetized bar, as hammering may cause it to break.
