Blade specifications
The Universal knife has a 10cm blade with a SG2 powdered steel core. This top-of-the-range alloy contains around 15% chromium and 1.3% carbon and, despite its high price, offers many advantages. With a hardness of around 63 HRC, it gives the knife an extremely long-lasting cutting edge and eliminates the need for regular stone sharpening. Despite its high hardness, the knife remains easy to sharpen when necessary. The microscopic structure of SG2 steel is also so homogeneous that it is described as very pure. This purity ensures excellent resistance.
The heart of the knife is then encased in softer stainless steel, folded in half and qualified as a San Maï 3-layer damascened blade. Damascening is a meticulously precise process designed to give the blade extra strength. You can see the different superimpositions of layers on the cutting edge of the blade.
Finally, the blade is hammered across the entire top. This hammering reinforces the blade's solidity, while preventing the vegetables you've just cut from sticking. The Yaxell name and brand logo are elegantly engraved on the hammering, giving the blade an authentic, elegant finish.
Handle technical features
Two stainless steel bolsters link the blade to the handle. The handle is made from Pakka wood, a composite of resin and laminated wood. Pakkawood is durable, robust and rot-proof. Resistant to humidity and temperature variations, Pakka wood is non-porous and suitable for kitchen use. Pakkawood has an elegant black color with golden veining.
The curved shape of the handle ensures an ergonomic grip. A superb mosaic rivet completes the handle. The mosaic represents the traditional emblem of the Japanese samurai and is a lovely little gem.
Finally, the base of the knife also boasts a very elegant finish, with the Ketu range kanji engraved in gold. Meaning "pure" or "unblemished", this is the detail that adds the final touch of finesse to this superb, top-of-the-range Universal knife.
Care instructions
To get the most out of your top-of-the-range knife over the long term, it's important to take good care of it. Never put the knife in the dishwasher. Wash the blade by hand with a soft sponge and a little washing-up liquid in lukewarm water, without wetting the handle. Dry the blade with a dry cloth before storing the knife. To do this, place it in a Bag or block, avoiding magnetic bars. A hammered blade holds less well and is more likely to fall off.
