Blade specifications
This knife has a smooth, curved 15cm blade that easily removes tendons, fat and contours poultry bones. The core of the blade is made of SG2 powdered steel, a high-end alloy containing around 1.3% carbon and 15% chromium. Although expensive, SG2 steel has a hardness of around 63 HRC, enabling the knife to retain its sharpness for a long time. As a result, it doesn't need to be stone-sharpened too regularly, but remains easy to sharpen whenever necessary. SG2 steel is also known for its purity. In fact, its microscopic structure is so homogeneous that it is a highly resistant steel.
This core is then encased in a softer, folded stainless steel, making the blade an even more resistant 3-layer San Maï damascus blade. In fact, you can see the superimposed layers of steel on the knife's cutting edge.
The blade is also hammered all over the top. The hammering reinforces the blade's strength, while preventing cut pieces of meat from sticking to the blade. Finally, the Yaxell logo and brand are engraved in the hammering on the blade. It's the touch of authenticity and finesse that finishes off the knife blade.
Technical features of the handle
Two stainless steel bolsters join the blade to the handle. The handle is made of Pakkawood, a resin and laminated wood material with excellent antibacterial properties. This material is also resistant to humidity and temperature variations, as it is non-porous. Pakka wood is suitable for kitchen use, with its sober black color highlighted by elegant golden veining.
The curved shape of the handle ensures a perfect, comfortable grip. A unique mosaic rivet completes the handle in the center. The mosaic is an attractive jewel, representing the traditional emblem of the Japanese samurai family.
The base of the handle is also finely worked. It features an elegant golden engraving of the kanji Ketu. This kanji means "pure" or "spotless", and is the final detail that adds to the delicacy of this top-of-the-range knife.
Care instructions
We recommend that you follow these few tips to ensure the meticulous care of your boning knife. To clean it, do not use a dishwasher. Instead, wash gently by hand with a non-abrasive sponge and a little washing-up liquid in lukewarm water. Do not run the knife handle under water. Use a very dry, clean cloth to wipe the blade without delay. Finally, you can store the knife in a sheath, case or block for safekeeping. We advise you to avoid placing it on a magnetized bar, as hammering may cause the blade to lose its hold and fall off.
