Choose the Yaxell Ketu JapaneseKiritsuke knife for all your everyday cutting needs!
This kiritsuke is a top-of-the-range knife from Yaxell's comprehensive Ketu range. The Japanese brand has used all its skills combined with top-quality materials to bring you exceptional knives.
Blade features
The smooth 20cm blade has the traditional pointed shape of the kiritsuke. Its core is made of SG2 powdered steel, a top-of-the-range alloy. It is one of the most expensive on the market, but has many advantages. Containing around 15% chromium and 1.3% carbon, its hardness is around 63 HRC, making for an extremely durable blade. The blade does not need to be sharpened too regularly with a stone, but remains easy to sharpen if necessary. It is also a steel with a microscopically pure structure, making it highly resistant.
This core is then encased in softer stainless steel and folded on either side. The blade is then described as San Maï 3-layer damascus. This gives it extra strength, and the different layers of steel are visible on the cutting surface.
The blade also features elegant hammering across the top. This reinforces its solidity and prevents food from sticking. Finally, the blade is finished with an engraved Yaxell logo and brand name, adding further elegance and authenticity to the knife.
Handle features
The handle and blade are joined by two stainless steel Bolster. The handle is made of Pakkawood, a robust and durable blend of resin and laminated wood. Non-porous, Pakka wood is rot-proof and resistant to temperature variations and humidity. Pakka wood has a timeless, sober hue punctuated by an elegant golden grain.
The curved shape of the handle ensures a comfortable, ergonomic grip. A mosaic is riveted to the center of the handle, representing the traditional emblem of the Japanese samurai family.
The base of the knife has also been worked. It features a superb engraved golden Ketu kanji. Meaning "spotless" or "pure", this kanji is the knife's final aesthetic and symbolic element.
Care and maintenance
If you follow these tips correctly, you'll have no trouble looking after your top-of-the-range knife over the long term. The knife must be washed by hand, taking care not to get the handle wet. Use a non-abrasive sponge and washing-up liquid in lukewarm water. Then dry the knife blade with a clean, soft cloth. To store your knife, you can place it in a sheath, Bag or block. We advise you to avoid placing it on a magnetic bar. As the knife's blade is hammered, it could break if dropped.
